Double Whopper w/cheese, fries and a chocolate shake.
Last night was Cheesy Sausage and Potato Casserole. Tonight, it's quick and easy Tacos.
I had two bacon and tomato sandwiches made at home. So good!
Some kind of chicken over rice with a veggie. LOL.
BLT + too.
I did a search to see if there were some recommendations for BLT sandwiches, like whether the tomato goes in the middle or on the top. I generally toast the bread and mayo or veganaise is required. One person suggested piling as much tomato between the bread as possible and eating over the sink, which I could appreciate but haven't done. One variation used a slice of mozzarella. Another suggested a slice of onion. I've been using fake bacon, but there is no good substitute for real bacon. It's what I'm having tonight, but just a basic version.
Turkey burgers on the grill. Supposedly today is the last day of this insane heatwave so hopefully we can start cooking inside again Saturday.
Had zucchini to use up so finally made a zucchini burger recipe that I've had for a while. Served on homemade sourdough rolls. Big hit with the family so will definitely make again!
A home made version of pad thai with eggplant and peppers from the garden. I had a bounty harvest of a few varieties of eggplant and have roasted and frozen a bunch for later. Not my favorite vegetable, but it's mild flavored enough to add to a lot of things, I hope.
Risotto with scallops and asparagus and lots of parmesan cheese.
Butternut squash soup with croutons.
Risotto! Pinktoe, good idea. risotto and…meatloaf. Yes, maybe thats what we will have. DH installed our red stove yesterday. Both require a stove.
edited to add: oh pooh, I dont have risotto rice on hand, or cheese.
Filet mignon and baked potatoes. My friend is coming for dinner.
chicken tacos
Terry, that sounds wonderful!
Trying to stave off a sinus infection/bronchitis so I'm thinking the leftover soup from yesterday.
Super simple tonight... grilled cheese sandwiches with either tomato or broccoli and cheese soup. Tomorrow will be lasagna roll ups with garlic bread.
Last night we had chips and guacamole (had some avocados that needed to be dealt with), sliced cheeses and summer sausage and cookies. Nice being able to snack for supper now and again.
Finally dealt with two huge zucchini from a friend yesterday. Have some of it along with beans, tomatoes, green peppers, carrots, celery, etc. all in the crockpot for a big batch of veggie soup.
So far this week...
Sunday- Homemade chicken nuggets with rice
Monday- Tamale Pie
Tuesday- Spaghetti
Wednesday- Homemade waffles, eggs, and bacon
Tonight- Nachos
Possibly a tradition carry over from younger days, but I try to put a little extra effort into dinner on Sundays and it's easier to cook now that it's not so hot.
So, "Baingan Bharta". An experiment using roasted eggplant and garden tomatoes. Traditional Indian.
Finally cooked the zucchini patties, so that is dinner for tonight.
Trying to use up some of the frozen veggies that have been around a while. Broccoli cheese soup, salad with garden tomatoes and cukes, and cornbread muffins.
Haven't had it in a while, so brown rice and lentil bake will be tonight.
Fall weather is definitely here! Putting a bean soup in the cp - it's a sweeter version of a not-quite-chili. Maybe some cornbread to go with it, if I have the ingredients.
Nice fall day was topped off with a crockpot chicken stew and homemade biscuits. Yum!!!
Chili and grilled cheese sammiches.
Ground beef crumbles with lots of chopped garlic, a few scallions, sambal oelek, a little tomato sauce, and plenty of salt. Also, Two soft boiled eggs with butter.
Homemade veggie pizza with some of the last of the garden tomatoes.
Falafel in pita with guacamole (I have avocados that we need to eat up) and roasted broccoli.
Smoked pork shanks and sauerkraut
chili or bierocks.
Summa them ramen noodles in a cup, that I added some hot sauce to. See---I made a grocery run to walmart, and they actually had some canned catt food on the shelve! So, not to be greedy---I picked up two whole cases, but left two cases for other customers. Don't want their catts to go hungry. But yeah---that left VERY little $$$$ for human food. Sooo, I had ramen noodles. Yup. If walmart hadna had that food, I was gonna make a run downta food-4-less, and pick up a case or two of catt food. But, thats halfway across town, which consumes too much Bidengas & runs the risk of a wreck. Traffic is murder. Driving is not my hobby.
curried chicken- very easy -rub the spice mixture on chicken parts, skinned, boneless or skin on and bone in Put on foil lined cookie sheet 400 degrees for 6 minutes if tenders and 10 or 20 minutes if parts. 1 tsp. curry powder, 1 tsp chili powder, 1/2 tsp cumin, 1/4 tsp. allspice, 1/4 tsp cinnamon, salt and pepper, 1 lb. of meat I just put it in the freezer bag when they've thawed and squeeze it until all coated. Add a little oil or butter if you want. pop in the oven and YUM! I amde a larger bathc of the spice mixture to have on hand so I don't have to measure all the time!
We will be eating fried green tomatoes for the next week, off and on.
Nswef, thank you, I will try this but def. send it to my son, as I think he would love this and we have started trading recipes.
Is the salt and pepper for the spice mix or is it from another recipe with the 1 lb of meat, or does this just mean it is the amount for 1 lb of chicken?
