    What's your fave way to do rice & beans?

    Last week for breakfast I made myself a big batch of a modified gallo pinto recipe (literally, spotted rooster, a traditional Costa Rican rice & beans dish). It was good and I ate it all week and was satisfied until lunch every day. I was thinking I should make more rice & bean dishes, because I'd get sick of doing the same one all the time.

    I found a bunch of ideas on Pinterest, but thought I'd see what my tried and true SL friends turn to when they want to whip up a batch of rice & beans. Sooooooo . . . . . go!

    I am boring but make a chili using my homemade salsa and beans with extra veggies and served over rice.

    I'm not huge on rice and beans, but I did just make this recipe last night: dried lentils (brown ones) 1/2 cup, a small bay leaf, cut up a small amount of a hot chili pepper to taste, 1/2 clove garlic, 3/4 cup chopped fresh tomatoes, 2 1/4 cups water. That cooks for 35 minutes meanwhile fry 1/2 cup finally chopped red onion in 1TB olive oil. Eventually add that to the lentils and add 1/4 + 1/8 cup rice (was white basmatti) cook for 20 minutes, when that is done cooking stir in another 1TB olive oil. And you'll have: rice and beans that taste like rice and beans! But it was pretty good, though it could not be more basic. This was from a Greek cookbook. I halved the recipe to get the above.

    Rice and beans are good with vegetarian chorizo fried up and then mixed in. I have stuffed peppers with that too. The only thing is that since you are expecting, not sure if the spiciness would agree with you. The are many recipes with beans in a cookbook I mentioned "Bean Banquets." Some of them are with rice but not most, but good if you just want to use more beans.....

    Just a thought. The area egg marketing board gives away recipes using eggs. Make a piecrust out of rice and eggs and fill with veggies and beans and bake.

    Veggie, egg and rice pie.
    1 C brown rice cooked in 2 C broth, stir in 1/4 C parmesan cheese, 1 clove minced garlic and 1 Tbsp each of parsley and basil. Stir 2 eggs into mixture. spread thinly in a large 10" pie plate and bake at 375 degrees until set, about 10 minutes.

    Spray non-stick pan and sauté a small diced red pepper and zucchini until soft. At this point I would mix in some legumes like lentils or white beans, 2 tsp oregano, 4 eggs and pour into pie shell and bake until centre comes clean when knife is inserted or about 30 minutes.

    This is on my to-do list for the weekend.

    razz that sounds really yummy!

    My fave breakfast these days is any leftover rice/beans/veggies. I heat in a cereal bowl in microwave and add various seasonings
    depending on what they already have in them. And, then top the heated mixture with a fried egg...yolk is best runny taste delicious
    when yolk runs into the mixture.

    Brown rice, red lentils, veggies and spices of choice.
    1 cup rice
    1 cup lentils
    4 cups water
    some salt

    Bring to boil, then cover and simmer for 30 minutes, let sit fora while before eating.
    I like to add chard or kale (a couple cups, chopped.)
    Very boring but cheap and easy. I like it with lots of butter.

    That sounds good to me and healthy, too. Sometime early next week I will be planting kale in my yard, now I have an idea of what to do with it, Thanks!

    Easy Red Beans and Rice

    olive oil
    3/4 c. chopped green bell pepper
    3/4 c. chopped onions
    2-3 cloves garlic, minced
    1/2 lb. smoked sausage (optional), cut into thin half-rounds
    1 can (14.5 oz.) diced tomatoes
    1 can (14.5 oz.) red beans, rinsed and drained
    1/4 tsp. oregano
    1 bay leaf
    1/2 tsp. hot red pepper flakes

    hot cooked white or brown rice

    Heat olive oil in large skillet and sauté green peppers, onion and garlic till softened. Add sausage (if using) and cook another minute or two. Add rest of ingredients and stir well. Bring to boil, then reduce heat and simmer uncovered 20 minutes. Remove bay leaf and serve over rice.

    Thanks all for the ideas! I'm also reminded that I need to throw on some dry white beans for a chili I plan to put together tomorrow. It was someone on here who gave me the great tip to just do my beans in the crockpot - no boiling, no fuss. It works so great, and then I freeze them! The trick is to remember to have some on hand at all times.

    Looking forward to trying some of these recipes!
