    Hey, the Indian version of mince!! Love it. Basmati rice is our go-to.

    I try to have it regularly.
    I make basmati in my IP fairly regularly and aim for resistant starch.

    Jane: I never heard of resistant starch before, so I looked it up - interesting! It's funny too because I like my bananas on the green side, and I love cold leftover pasta, although my DH teases me for eating "cold old food."

    You've been right all along! Supposedly, it's a good prebiotic, or probiotic, or something.

    Mince and tatties doesn't sound bad, either.

    Tonight it was black bean, sweet potato and chicken enchiladas with homemade enchilada sauce. The sauce was easy to make with onions, spices including 2 kinds of powdered chili, tomato paste and homemade chicken broth.

    Tomorrow i am making some spagetti sauce with loads of leftover mushrooms (overbought) and tomatoes from a neighbor. I can freeze it for later.

    Those enchiladas sound awesome! We've got some leftover roasted chicken and a couple of sweet potatoes, maybe I will do that tomorrow.

    Turkey cacciatore. Bone-in turkey breast, garlic, oregano, a little red pepper, a can of whole tomatoes that turned out to be wholly sauce (!), and celery instead of bell peppers (which do not agree with some members of this household). That'll be dinner for a few nights.
