    My favourite local butcher makes the most wonderful bacon. Tonight I enjoyed eggs and that bacon on seeds and grains toast and an apple. Lunch was a large mixed salad so I had my veggies covered.

    Cauliflower fried rice with smoked pork rib. Yum! Dinner done in 15 minutes!

    Tomorrow: baked chicken thighs, baked squash and a baked potato!

    I have had a can of coconut milk in my pantry for a while so looked for a recipe. Made this curried chicken for supper tonight. https://www.allrecipes.com/recipe/68...entType=Search

    I used half the madras curry powder called for as I was not sure how spicy it might be, grape tomatoes halved and a cup of homemade salsa served on steamed brown rice with asparagus spears. Looked just like the photo.
    I will definitely make it again but half the recipe as I have enough for at least three more meals. I will find out if it freezes well.

    Looks good! We spent the day running errands so we grabbed a rotisserie chicken and will have it with mashed potatoes and carrots.

    I make curried chicken with coconut milk often. It freezes fine.
