    My wonderful daughter-in-law made eggplant parmesan and salad--it was truly like eating at a fine restaurant, she is such a good cook!

    Vegetarian chili with veggie and hummus dip - carrots, cauliflower and peppers . Add a Granny Smith apple and some Limburger cheese.

    Hellman's mayo recipe- Chicken thighs parmesan- 1/2 cup Duke's mayo, 1/4 cup parmesan, 4 tsp. Italian bread crumbs ( I crunched up croutons) Oven preheated to 425, mix mayo and parmesan, spread on thighs ( one had skin, one not), put on breadcrumbs- bake about 20 -25 minutes
    It was very tasty after a day working in the yard!
