Met up with some friends from the old warehouse job for a quick dinner. BLT w/fries.

We had BLTs Thursday night with local tomatoes and fresh Scali bread from the bakery. I prefer a great BLT to a great filet mignon!

Last night was supposed to be beef stew in the crockpot but since I spent most of the day in the ER with the husband, that didn't happen. It ended up being KFC because that was next to the CVS where I had to pick up prescriptions. Tonight is spaghetti with garlic bread.

I pulled out some of the minestrone from the freezer for tonight.

Klue - hope your DH is better! Honestly, my hubby has never said no to anything I've served for dinner - which I've just realized as I typed it. That's with accommodating his no seafood requirement, of course. He will eat FRESH caught fish the same day its removed from the water. Not store bought. Hubby is ok with grilled cheese and soup or breakfast for dinner. Even a salad and sandwich combo. I don't have to create a Sunday supper every night! I need to work on dinner at home for two. I can do one, or the family size but two is some how difficult for me!

I agree, and I'm trying to learn how to do this as well. After cooking large meals to feed many, it's HARD to dial back! I think I'm slowly getting the hang of it, but there are some meals that just come out with tons of leftovers. LOL.

For those we freeze about half of it for another time. Or times.

He is fine. Passed the kidney stone while at the hospital. Of course, we didn't know that until Sunday evening and he was still feeling ok after the morphine wore off.
