found a recipe I'm trying tonight with riced cauliflower, spinach and mushrooms. Cooked with soy sauce and I don't remember what else. I'm going to add some leftover broccoli and maybe a can of cannellini beans.

That has all the things I like! Sounds good. If you don't mind, post on how it ends up.

Stir fry garden eggplant and peppers with noodles and a sort of pad thai sauce. I've frozen a few packages of yellow squash and the neighbors are hinting they are over them. I may make one more recipe of squash bread before terminating the plant. I've eaten a lot of squash.

There has been a peach stand set up in a parking area near by with regional peaches that have been works of art. I picked up a large bag yesterday and am debating cobbler or...?

Thursday - take out sandwich night for us. Subway, Jimmy Johns, Jersey Mikes, etc. Nice to have a night where I don't hear those words, "what shall we have for dinner?"

It was very tasty and no leftovers! Here's the recipe I used. I ended up adding a drained can of garbanzo beans. https://stylishcravings.com/low-carb...liflower-rice/

I made many things from peaches this year too. Peach cobbler, peach crisp, peach pie, peach crumble, chia peach jam, peach tart, peach popsicles, orange/peach cake. All were so good. We ate many peaches out of hand too.

Tonight will be stuff from the fridge. End of the week and leftovers need to be eaten and fresher foods need to be prepped.
