    We had leftover tilapia from making our one pot fish florentine. to make it, line the bottom of a cast iron dutch oven with frozen french fries, then many cups of spinach, then tilapia layer, then layer of tomato basil sauce from last summer's garden, then parmesan cheese. We made enough for two dinners worth and it was better this second night.

    Wow, that sounds delicious!

    I had a turkey and cheese sandwich on pumpernickel just now, as I spent the day in the hospital with DH--he had an OP surgery to repair a large hernia. It was a long day, mostly for him!

    Omg, poor DH--I had that surgery in the fall, so tell him to hang in there, it will get way better soon.

    Best wished for your DH, Catherine!

    We had homemade crab cakes with rice, and I had sliced tomato and arugula on the side. Arugula makes everything more special.

    Okay---Mac-n-cheese for breakfast, mac-n-cheese for lunch, cookies-n-milk for supper. Yup. One a these days, I'll order up a HUGE pizza or a STEAK dinner on Door Dash, and tip the driver a $20. Not soon, tho. Hope that helps you some.

    I try to eat fish once a week and it's usually a challenge as I'm picky about fish. Tonight it was baked cod with rice and spinach. Canned tuna gets in the rotation and I try to find fish that is sold as some form of sustainability if that's possible. I have some issues with salmon, but don't care for it anyway. Good fresh fish is expensive here in the middle between the oceans, but it's probably that way everywhere.

    Friend is coming over for game night and bringing rice and beans. I think I'll do noodles, cabbage and spicy turkey sausage.

    I bought takeout from a local restaurant, and I thought they knew how to cook. They used to know how to cook, apparently, no more.


    Anyway, they had on their menu “beignets” which I ordered, but they seem like hush puppies. They were inedible, so my dog has been eating them for a few days.
