    Mediterranean salad recipe request

    Went to a restaurant while on vacation and they had a WONDERFUL Mediterranean salad. I asked for the recipe but was told the owner was not there so…. Anyways, it had cukes, tomatoes + in a non-vinegary, non sweet marinade. I see so many recipes and wonder if anyone here has one they would be willing to share?

    Maybe the dressing was just lemon juice and olive oil? That is what we use when we make that type of salad with cukes, tomatos, olives, garlic and sometimes feta.

    That's how I usually make it sometimes with the addition of red onion and/or chickpeas.
    My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished two bags of M&Ms and a chocolate cake. I feel better already!

    do you use raw garlic or has it been cooked and softened in some way?

    Wow, ok. I do love garlic, but havent used it raw.

    I rarely measure but I am thinking for just the two of us it is about 2 TBSPs of olive oil to half a lemon.
