Can I go minimal for Christmas???

Decided to make Penang Curry for our Christmas dinner...was thinking about a pot roast but given prices and the heaviness of that dish not appealing right now, decided on the lighter Penang Curry. May go for beef or chicken and a good assortment of vegetables...

Speaking of curry, does anyone make their own curry spice mixture they would be willing to share?
